Harvest: July / SeptemberThe Tabasco pepper, a firework of flavor and heat, challenges the palate with its remarkable strength, measured at a level 9 on the Scoville scale, oscillating between 30,000 and 50,000 units. Robust and dynamic, this variety unfurls a profusion of small, conical chillies, varying in length from 3 to 5 cm, proudly reaching for the sky. Each plant, a true symbol of vitality, bears around a hundred of these precious fruits. From green to red, through a palette of shimmering oranges, their transformation reveals a bewitching flavor, subtly blending the delicate scent of celery and onion.
Used fresh, dried or ground, Tabasco pepper is the source of the famous sauce of the same name, which has conquered palates the world over since its beginnings in Louisiana.
To thrive, the Tabasco pepper requires constant warmth, making it an ideal guest in regions with hot summers or gardens generously exposed to the sun. In regions where frost is a distant memory, it can flourish for several years, delighting even the most passionate gardeners.
Successful Tabasco pepper sowing requires special attention from February-March onwards. The seeds, carefully nestled in fine potting soil, take refuge in the benevolent warmth of a heated greenhouse, where they gently awaken, intoxicated by the ambient humidity. After around three weeks, the young shoots are ready to be transplanted to deep, light-bathed, aerated soil, where they can flourish to the full. Regular hoeing, well-dosed watering and careful mulching will ensure that they flourish. For those who don't enjoy a warm climate, greenhouse cultivation is a recommended option.
In the company of other solanaceous plants such as Peruvian cockroaches, nightshades and peppers, Tabasco chillies find their place in a harmonious ecosystem, where each plant brings its own touch of vitality and flavour.
The chillies are harvested around five to six months after sowing, when the fruit reaches full maturity. Picked as and when needed, or dried in the sun or oven, they then reveal their full intensity, ready to ignite the taste buds of thrill-seekers.
