    Perilla, an ornamental annual growing to 45-60 cm tall, is known as Shiso in Japan and Zi-su in China. Its leaves, with a complex flavor combining basil, pepper and lemon balm, are eaten raw or cooked to flavor a variety of dishes, including rice, fish, soups, nems and vegetables.

    Sowing Perilla can be capricious and time-consuming. Sow in spring under cover or in autumn, in a terrine to facilitate transplanting into pots when the plants have 2-3 leaves. Soak seeds overnight before sowing to facilitate emergence. Exposing the terrines to light is crucial, as Perilla needs light to germinate properly. Sow on a bed of potting soil, packing lightly and covering with a thin layer of soil. Keep the temperature at 20°C and the soil moist. Germination may take 2 to 4 weeks, requiring patience.

    Young plants can be transplanted to the garden or kitchen garden, 25 cm apart, as soon as night frosts are no longer a threat. Favour a sunny exposure and maintain a humid atmosphere to promote growth.
