    Piment Gorria, the traditional Espelette pepper of the Basque Country, is an early, productive and vigorous variety, with a Scoville rating of 4/10. Each plant produces 15 to 30 chillies, 9 cm long and 3 cm wide at the collar, turning from green to red at maturity, with an average weight of 40 grams. The plant reaches a height of 1.1 m. Cultivated outside its region of origin, it cannot be marketed under the name of Piment d'Espelette.

    For best results, sow in February-March in pots of fine potting soil in a greenhouse heated to 25°C. Peppers need high temperatures and moderate humidity to germinate in three weeks. Transplant in May into deep, loose, warm, sunny soil, sheltered from the wind, with 50 cm spacing in all directions. Hoeing, watering and mulching are necessary. If the region is not warm, greenhouse cultivation is recommended.

    Peppers cohabit well with other solanaceous plants such as Peruvian cockroaches, nightshades, peppers and tomatoes. Harvesting takes place 5 to 6 months after sowing, when the peppers are fully ripe. They can be picked as and when needed, or dried in the sun or oven.
