    Marshmallow, also known as Marsh Mallow, is a plant native to Europe. While it is famous for giving its name to a delicious sweet, it also has interesting medicinal and culinary uses.

    Marshmallow roots were traditionally used to make the eponymous candy, and are sometimes given to young children to help with teething, due to their calming effect. In cooking, the roots can replace egg white to thicken sauces and soups. As for the leaves, they can be eaten cooked, similar in taste to spinach.

    Medicinally, marshmallow has anti-inflammatory, expectorant and gastric mucosa-protective properties, making it a versatile plant for health care.

    Marshmallow is best sown at the end of March in a greenhouse or greenhouse frame, or in the field from May to July. The plant prefers rich, deep, cool soil that remains moist throughout the summer. Its pinkish-white flowers, which appear in July, are also melliferous, attracting pollinators. To ensure good spring recovery, we recommend cutting the plant back to 3 cm from the base at the start of the season. Mulch the plant in summer and winter to protect its roots.
